現代工業和科技的發展,給人類創造了舒適便捷的現代化生活方式,卻也使得蔬果在人類飲食中的比例越來越低。與此同時,許多疾病像糖尿病、高血壓和癌症等困擾著人們的健康,而這些又和飲食習慣密切相關。許多科學研究顯示,素食及均衡營養,對人類的健康極爲有益。隨著人們對健康飲食認識的不斷提高,素食愛好者越來越多,素食文化中包含的愛和同情、友善和自由的人道精神亦獲更多認同。這一期許苑慧營養師奉獻給大家的是素食“1500卡一日膳食計劃”,她將蔬果的天然美味結合烹飪的創新巧技,誘人的色香味帶來的是健康飲食的新理念。

早餐

A. 麥烘餅

材料(1人份量):1/2杯藍莓(Blueberries)1/2杯山莓(Raspberries)塊現成全麥烘餅Z(Eggo Nutri-Grain,low fat waffle)杯脱脂希臘乳酪Greek yogurt,nonfat(Dannon Light and Fit)1/4

作法:將全麥烘餅烤熱加上脱脂希臘乳酪,莓果即可食用

午餐

C.紅燒牛肉糙米菜飯材料(2人份量):1/2磅瘦牛肉1-1 / 3杯熟糙米飯杯小白菜(切段)湯匙蒜茸杯葱花1/2 1/4 1茶匙芥花籽油L茶匙料酒 調味料:L茶匙太白粉,1/4茶匙黑胡椒粉L湯匙低鹽醬油L茶匙糖,1/2茶匙麻油適量水 作法:瘦牛肉洗淨,放入調味料混好備用;小白菜1杯,燙熟,溫乾水份放上盤子備用,將炒好的牛肉放上備好的糙米飯和小白菜即可。 

晚餐

E.南瓜豬肉煲

材料(4人份量):L磅豬肩肉(切塊)Z杯日本南瓜(切塊)條芹菜(切塊)8 1個洋葱(切塊)湯匙蒜茸適量香菜(parsley)1湯匙芥花籽油杯低鹽脱脂雞湯1

調味料:茶匙胡椒粉茶匙麻油湯匙低鹽醬油

作法:豬肩肉洗淨,切塊放入調味料混好備用;沙鍋中放芥花籽油,爆香蒜茸,芹菜,洋葱,放入豬肉,南瓜低鹽脫脂雞湯:鍋子蓋上後,猪肉燉煮至熟,南瓜變軟,最後灑上香菜即可1/2 L

F.蒜香絲瓜

材料(4人份量):2.5磅絲瓜(切塊)L湯匙蒜茸湯匙芥花籽油調味料:茶匙糖作法:鍋中放油,蒜茸,絲瓜,調味料炒好即可
